This Easter Carrot Cake Smoothie Will Blow Your Mind!

Who says that you can’t have healthy Easter, and instead of consuming the famous carrot cake, you try something different – a carrot cake smoothie.

This smoothie tastes just like the original carrot cake recipe, but without added any sugar and calories, which makes it the perfect smoothie to kick-start your morning (or to end your day).

In case you wonder is it difficult to make it, the answer is NO.

It is very easy to make it as every other smoothie you make, you just need the right ingredients to taste like carrot cake.

Ester Carrot Cake Smoothie

Ingredients

  • 2 cups of peel and diced carrots
  • 2 ripped and frozen bananas (or fresh if you prefer)
  • 2 cups of unsweetened vanilla almond milk
  • 1 or 1 ½ teaspoon of ground cinnamon
  • ½ or 1 teaspoon  of ground nutmeg
  • ½ teaspoon of ground ginger
  • ½ teaspoon vanilla extract
  • ½ tablespoon of ground flax-seed
  • pinch of ground cloves
  • 2 tablespoon of shredded coconut
  • ½ – 1 cup of walnuts (leave few for decoration)
  • 3-4 ice cubes (in case you use fresh bananas)

Preparation

As every smoothie is made, just place each ingredient in a blender starting with the carrots and ending with ice cubes.

Blend for couple of minutes until you got a smooth and creamy texture.

Top it up with some walnuts, additional shredded coconut, extra cinnamon or even graham cracker crumbles.

And that’s it!

Not only it is healthy, but if you hook up to this smoothie instead the regular carrot cake, you will save yourself from running or biking for 30-50 min, so you can spend those 415 carrot cake calories per slice.

Advice: In case you do not have a high speed blender, steam carrots instead and cool them prior blending. It will  make them easier to blend.
